Smoked Tomato Bruschetta

Ingredients

12-14 medium firm plum tomatoes/diced
2 Tbl. Minced garlic
2 Tbl. Chopped fresh basil
1 tsp. Chopped oregano
2 cups diced red onion
1 cup chopped green onion
1/2 cup capers
1 cup chopped black olives
2 cups shredded Romano cheese
1 cup Xtra virgin olive oil
1 cup balsamic vinegar
1 tsp. Liquid smoke
1 cup brown sugar

Mix all ingredients well and let sit over night. (NO NIBBLING!) Cross slice one loaf of crusty French or Italian bread and also let sit over night to harden .
Keep chilled and serve on top of sliced bread crostinis
Should be around thirty pieces

 

St. Louis Style Ribs with Molasses and Chili B.B.Q.

Ingredients

10-14 lbs. Of short cut St Louis style beef ribs.
3 Tbl. Of each, chili powder, garlic powder, cumin, black pepper, salt, sage, onion powder, and mesquite seasoning.
2 12 oz. bottles Thai sweet Chili sauce
1 8 oz.bottle of Black strap molasses
1 12 oz. bottle of grenadine
2 gallons of Florida Orange Juice

Rub dry spice mixture liberally over every inch of rib surface. Place rubbed ribs in shallow roasting pan and pour in orange juice to cover the bottom of pan and just go about an half inch over bottom of ribs.
Cover with foil.
Mix Chili sauce, molasses, and grenadine well.
Roast in pre-heated 300° oven for two hours, let sit and cool in Fridge over night.
Brush ribs on grill with sauce mixture until well glazed and candied.

 

Grilltop Pork Loin with Cinnamon-Cane Syrup Brush

Ingredients

1 whole 10-12 lb. Center cut pork loin
8 Tbl. Cinnamon
6 Tbl. chopped garlic
4 Tbl. Chopped ginger
1 12oz. jar of Creole or whole grain mustard
1 Qt. Of unfiltered cane syrup. Most grocery stores have this item.
2 cups kosher salt
Cracked black pepper corns

Rub pork loin with in order ,mustard, garlic, ginger, and half of cinnamon. Roast in 325” oven for about 40 minutes.
(Note, pork is still fairly pink inside.)
Let rest over night in fridge. Mix remainder of cinnamon and cane syrup and use for basting liquid on grill top next day.
Slice and serve.

 

Mimosas and Bellinis

Ingredients

10 bottles of Champagne
5 Qts. Of Florida Orange Juice
3 Qts. Of Peach Nectar
1 bottle of Framboise. (Raspberry liqueur)
2 pt. of fresh strawberries
1 pt. of fresh raspberries

Mimosas are merely nothing more than equal amounts of VERY CHILLED Champagne and Orange Juice.
Garnish with fresh strawberry
Use five bottles for this labor intensive task.
The other five bottles mix two parts of VERY CHILLED champagne and one part each of Peach nectar and Raspberry liquor.
Garnish with floating raspberries.

You may need a drink after this taxing, brutally exhausting manual labor.

 

Broken Leg Chicken

Ingredients

8-10 lbs. Of large chicken drum sticks. Roasters would do nicely for this.
1 bottle of sassafras tea syrup or extract. At most markets.

3 Tbl. File powder
2 Tbl. Cumin powder
3 Tbl. Kosher salt
1 tsp. Cayenne pepper

Brush drumsticks with sassafras and place on HOT grill surface.
Sprinkle each side with all of the dry spices turning and cooking on each side for 4-6 minutes.

 

Mom Tiki's Famous Overnight Salad

Ingredients

2 heads iceberg lettuce, chopped
2lbs. VERY sharp cheddar cheese cubed into half inch squares
1lb. Crispy bacon bits
5 stalks of celery diced
1 diced green pepper
1 box frozen green peas
1 bunch of green onions chopped
5 cups of HELLMANS REAL mayonnaise

In large mixing bowl, mix all of the ingredients the night before serving and let sit refrigerated .Make sure to stir and turn it over as many times as you think to do so.
Serve next day chilled.
AVOID PROLONGED SUNLIGHT AND HEAT ON THIS ONE!

 

Curried Sweet Potato Salad
OK, this one takes a little time,
(but it’s worth it!)

Ingredients

6-8 lbs. Of peeled raw sweet potatoes or yams, diced into one inch cubes.
1 can green curry paste from the Asian / ethnic section of a good grocery store.
2 medium size red onions diced
1 bunch green onions chopped
1 Tbl. Cumin
4 cups brown sugar
2 tsp. Cinnamon
2 Tbl. Kosher salt
1 tsp. White pepper
8 oz. HELLMANS REAL MAYONAISE

In 300° oven, slow roast  the diced potatoes30-40 minutes, until tender. Do this at least the morning before game time and let cool. VERY carefully toss potatoes and ALL of the other ingredients until a uniform coating and mixture is obtained
CAREFUL not to tear up the potatoes.
Serve well chilled next day.

 

Baked Plantains

Ingredients

4-6 lbs. VERY ripe Plantains, peeled and sliced about a half inch thick
2 Tbl. Cinnamon
1 tsp. Nutmeg powder
1/2 tsp. Allspice
1 box brown sugar
1 cup honey
2 tsp. Kosher salt
6 cups vegetable oil.
1 lb. butter

In deep walled pan bring vegetable oil to deep frying temp. and fry the sliced plantain on both sides until lightly browned or darkened. Then line a casserole bowl with fried plantain and layer it with mixture of sugar and spices. Pour honey over layered plantains and slice butter chips across top. Baked for 30 minutes at 325°
Reheat on grill top in roasting bowl for tailgate.

 

Key West Conch Chowder

Ingredients

2 lbs. Conch, trimmed minced
4 Tbl. Lime juice
10 Tbl. Tomato paste
8 strips bacon, diced
3  Tbl. Olive oil
2 onions, diced
2 carrots, minced
4 stalks celery, minced
5 cloves garlic, minced
2 green peppers, diced
6 ripe tomatoes, peeled, seeded, and chopped
1 scotch bonnet or habanera pepper, minced
1 cup dark rum
1 cup sherry
2 lbs. Diced potatoes
4 bay leaves

1 tsp. Thyme

1tsp. Basil

2 Tbl. Worcestershire sauce

2 Tbl. Tabasco sauce

12 cup chicken stock

Combine all in DEEP kettle and slowly bring to boil . cook in low simmer for at least three hours.

 

Marbled N.Y. Cheesecake with Mocha Sauce

Ingredients

1-1/2 lbs. Ricotta cheese

4 eggs
1 cup sugar
2 tsp. Vanilla
1 Tbl. Flour
1 deep dish graham cracker crust pie shell
1 pint heavy cream
3 shots KAHLUA
3 Tbl. Ground espresso coffee

Beat the eggs until lemony in color, slowly add the sugar, and vanilla, and coffee. Pour into pie shell and bake on 350” for 40 minutes
Add Kahlua and stir together. Let chill and drizzle over sliced cheesecake for serving.
